Chili Lime Tofu Stir Fry
Sometimes you want dinner (or lunch) and you want it now. This Chili Lime Tofu Stir Fry understands that. It’s simple, different than the typical stir fry, and requires just a bit of chopping and not so much waiting.

You don’t need an oven for this one, so no need to hop on the oven line if your roommates (or mom) has it set to a different temp (I understand that struggle lol).

Chili Lime Tofu Stir Fry
You may want to double if making for a larger crowd.
Ingredients
Avocado oil (or other high-heat oil), for sautéing
1 block extra firm tofu, pressed and cut into 1/4-inch cubes
1 medium onion (about 1 cup), chopped
2 tablespoons fresh ginger, finely chopped
1/2 of a red bell pepper (about 1/2 cup), chopped
1 1/2 cups small broccoli florets
1 cup green beans, trimmed and chopped into thirds
One 8-ounce can water chestnuts, drained and rinsed
2 tablespoons low sodium soy sauce
Juice from half a lime
1 teaspoon Chile Lime Seasoning Blend from Trader Joe’s
1 teaspoon garlic powder
1/2 teaspoon sea salt
Black pepper to taste
Sesame seeds, for topping (optional)
Directions
Heat avocado oil in a large pan over a medium flame. Add tofu to pan and sauté with a wooden spoon until light yellow (about 3 to 4 minutes). You can cover the pan with foil to accelerate this process.
Add onion, ginger, red pepper, broccoli, green beans and water chestnuts to pan. Mix between each addition. Add more oil if pan appears dry.
(Note: It’s easiest to chop all vegetables in advance for this recipe. However, if you’re chopping as you go along, cover pan with foil between each addition and lower flame slightly so vegetables don’t burn).
Add soy sauce, lime juice, Chile Lime Seasoning Blend, garlic powder, salt and black pepper. Mix well; continue sautéing.
Cover pan with foil. Allow vegetables and tofu to cook for about 8 to 10 minutes over a medium flame. Stir occasionally so tofu and vegetables cook evenly. Vegetables should be soft and cooked through when ready. Top with sesame seeds. Enjoy over brown rice or grain of choice.

I eat red meat and poultry, but I do like Tofu quite a bit. Is this okay to have? It seems like a reasonably healthy protein source (unless fried). Any suggestions? Have not read the book yet but will as soon as I can. Thank you!
