Wholesome Rice, Beans and Tomatoes

If you’re looking for something filling, delicious and *EASY* to make with the cans you’ve stocked up on, this Wholesome Rice, Beans and Tomatoes dish is for you! The rice-bean combination here produces a complete protein, which means that it contains the nine amino acids that our bodies cannot synthesize. Though there are a total of twenty different amino acids, our bodies are only capable of synthesizing 11 of them, so it’s important to eat a variety of protein-rich foods to get the rest in.

Enjoy this fiery, vegetarian dish on its own or in a tortilla with melted cheddar cheese and a dollop of plain Greek yogurt.

Wholesome Rice, Beans and Tomatoes

This vegetarian staple just got a fiery upgrade.

Ingredients

  • High-heat oil, such as avocado oil or sunflower oil, for sautéing
  • 1 medium onion, chopped (about 1 cup)
  • Kosher salt to taste
  • Black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons tomato paste
  • cups low-sodium vegetable broth
  • 1 cup brown rice (dry)
  • One 15-ounce can black beans, drained and rinsed
  • One 14½-ounce can fire-roasted tomatoes or diced tomatoes
  • Sprinkled of red pepper flakes (optional)

Instructions

  • Heat oil in a medium saucepan over medium heat. Add onion; sauté until translucent. Add kosher salt, pepper, garlic powder, smoked paprika and tomato paste. Mix with a wooden spoon until onions are soft.
  • Pour vegetable broth over onions. Add rice, beans, tomatoes and red pepper flakes. Mix. Cover saucepan; bring to a boil. Lower to a simmer for 45 minutes to 1 hour, or until all liquid is absorbed. You can uncover the pot toward the end of the cooking process to help the liquid boil out.
