Orange Zest, Cranberry and Dark Chocolate Cookies
Not so nutritious, but definitely delicious! This recipe is designed for chocolate and fruit lovers.
- 1 1/2 sticks unsalted butter, softened
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 3/4 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- Zest of 1 medium orange
- 1/2 cup dark chocolate chunks
- 1/2 cup dried cranberries
Preheat oven to 350 F. Line two cookie sheets with parchment paper.
In a large mixing bowl, beat butter and sugar well. Add egg and vanilla; continue beating. Add flour, baking powder, salt, nutmeg and orange zest to bowl. Mix until just combined. Stir in dark chocolate chunks and dried cranberries with a spatula.
Measure out heaping tablespoonfuls of dough, and place on cookie sheets. Make sure to leave one-inch spaces between balls. Flatten balls slightly before baking.
Bake for 20 to 25 minutes, or until edges are set and bottoms of cookies are light brown.
