Pumpkin Spice "Cuffins"

When cookies meet muffins you get cuffins! Enjoy this recipe that's perfect for fall.

  • ½ cup Earth Balance, melted (1 stick)
  • ¼ cup brown sugar
  • ¼ cup sugar
  • 1 teaspoon vanilla
  • 6 tablespoons pumpkin puree
  • 1 large egg
  • 1 cup flour
  • ½ cup teff flour
  • teaspoons cinnamon
  • ¾ teaspoon pumpkin pie spice
  • ¼ teaspoon cloves
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ cup chocolate chips


  • In a large mixing bowl, mix Earth Balance, sugars, vanilla, pumpkin puree and egg together well.
  • In a medium mixing bowl, whisk together flours, spices, salt, baking powder and baking soda. Add the dry mixture to the wet mixture in several additions, mixing well between each addition. Dough will be soft and sticky. Stir in chocolate chips.
  • Cover dough and refrigerate for 30 minutes or longer.
  • Preheat oven to 350 F. Line two baking sheets with parchment paper. Roll heaping tablespoons of dough into balls, and arrange on baking sheets, making sure to leave space between each ball. Before placing trays in oven, gently flatten tops of dough balls using your hands or the back of a spoon.
  • Bake cookies for 10 to 12 minutes. Edges will be set and cookies will be soft in the center when ready. Enjoy!
