Pasta with Vegetarian Meat Sauce

An easy, quick and satisfying meal – basically a cheat recipe.

Ingredients
  

  • 2 to 3 tablespoons avocado oil (or other high-heat oil), for sautéing
  • 1 small onion, chopped (½ cup)
  • 1 medium red pepper, chopped (1 cup)
  • 1 tomato, chopped (1 cup)
  • Dash of black pepper
  • One 12-ounce package of Trader Joe’s Beef-less Ground Beef, crumbled
  • One 15-ounce can tomato sauce

Instructions
 

  • Heat oil in a large frying pan over a medium-high flame.
  • Sauté onion with a wooden spoon until translucent. Add red pepper and continue sautéing until soft. Add black pepper and tomato. Mix. Sauté until tomato juice runs.
  • Crumble Trader Joe’s Beef-less Ground Beef into pan. Mix with vegetables. Continue to sauté for several minutes, until “beef” reaches desired texture.
  • Lower flame. Mix in tomato sauce. Simmer for 2 to 3 minutes.
  • Pour “meat” sauce over whole wheat or brown rice pasta, farro or brown rice. Serve immediately.
