Chocolate Chip Banana Heaven

My friends loved this chocolate chip banana situation :)

  • 3 bananas
  • 2 eggs
  • ¼ cup honey or maple syrup
  • ¼ cup almond milk
  • 1 cup whole wheat flour
  • ½ cup old-fashioned oats
  • 1/2 cup instant oats
  • teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 teaspoon vanilla
  • 1 cup dark chocolate chips
  • 1 handful of cashews, roughly chopped, for topping (optional)
  • Shredded coconut, for topping (optional)


  • Preheat oven to 325 F.
  • In a large bowl, mash the bananas well. Add in the eggs, one by one, and mix thoroughly.
  • Stir in the honey or maple syrup and almond milk until the mixture looks smooth.
  • In a separate medium bowl, combine the flour, both types of oats, cinnamon, baking soda and salt.
  • Add the dry mixture to the large bowl (wet mixture) in several intervals, mixing thoroughly between each addition until everything is well combined.
  • Stir in the vanilla and the dark chocolate chips.
  • At this point, you can choose to either make muffins or banana bread. Both forms have turned out delicious.
    Fill muffin tins or loaf pan 3/4 of the way (it will rise a lot in the oven).
  • Chop up a handful of cashews, and sprinkle on top of the muffins/bread. Add some shredded coconut.
  • If you’re making muffins, they will need approximately 20-25 minutes.If you’re making banana bread, it will need closer to 35-45 minutes, but keep checking it after it reaches the 20 minute mark.
  • Muffins and bread will both look golden and slightly crisp when ready. If you’re not sure, insert a knife into the cake. If it comes out clean, you know it’s done.
