Balsamic and Maple Glazed Sweet Potatoes

Add these Balsamic and Maple Glazed Sweet Potatoes to salads, enjoy as a side, or eat straight off the pan as a snack!

Ingredients
  

  • 2-3 sweet potatatoes, peeled and cut into small cubes (4 cups)
  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons maple syrup
  • Kosher salt to taste
  • Black pepper to taste
  • Pinch of cloves

Instructions
 

  • Preheat oven to 415 F. Line a large baking sheet with parchment paper.
  • In a medium mixing bowl, use a spatula to mix the olive oil, balsamic vinegar, maple syrup, black pepper, kosher salt and cloves together. Add the chopped sweet potato, and mix until evenly coated.
  • Transfer sweet potatoes to baking sheet, and arrange in a single layer. If there is any glaze left over, pour it on top of the sweet potatoes.
  • Bake potatoes for about 25 minutes total, until cooked through and crispy. Toss potatoes with a metal spatula after 15 minutes to ensure even cooking.
